Rich and Creamy Banana Buckwheat Porridge



Long time no see, and what's a better way to come back than with some lovely homemade food you can easily make and enjoy yourself? :)

As some of you may know from my Instagram, I am the real queen of porridge. This creamy, filling breakfast of combined oats, milk, nuts and fruit is something I make nearly everyday, as it is quick, delicious and can be interpreted in a thousand sweet, mouthwatering ways! 

So naturally, when I discovered the new,  healthier, bloat-free and gluten-free way to make porridge using not oats, but dried buckwheat (!), I had to share it with you. Not only does it have an amazing nutritious value, but tastes incredible and does not require using extra sugar or honey - the sweetness of the banana does the job here.

No more rumbling, let's prepare some lovely buckwheat porridge!


INGREDIENTS (serves 2)


1 cup of dried buckwheat *

water

semi-skimmed milk (can use almond, soy or coconut if you prefer!)

1 fairly ripe banana (the more ripe, the sweeter)

cinnamon/cocoa powder

fresh or dried fruit/ nuts and seeds for decoration



* For those of you, who live in Poland, look for 'raw buckwheat' (kasz gryczana nieprażona), usually available in large supermarkets or eco grocery shops. 


PREPARATION


1. Pour 2 cups of boiling water over your buckwheat and leave to soak overnight.

2. In the morning, rinse the soaked grains thoroughly and place the amount you want to cook in the saucepan

3. Pour some milk over it, just enough to cover the buckwheat completely and leave a tiny layer of milk on top

4. Put the saucepan on medium heat and wait till it begins to simmer and thicken up a bit. Keep stirring!

5. Chop up the banana in rough chunks and throw it into your mixture, boiling and mashing it with the buckwheat and milk 

6. Do that, until the mixture forms a creamy and rich consistency of a traditional oat porridge

7. Add some cinnamon, cocoa powder (or both) for extra flavour and some brown sugar, if it's not sweet enough for you

8. Serve in a cute breakfast bowl with some fresh fruit, nuts and seeds sprinkled on top - today I went for more banana, cashew nuts and an extra dust of cinnamon
