Cream Cheese Pasta Bake with Salmon and Courgette



Hello to all of my foodies out there!

Today I would like to share a meal with you completely out of the blue (it even surprised myself). Yesterday I was staring into my fridge, as you do, and managed to combine random ingredients into this goodness. It is something I created completely on my own, hence it landed on the blog as my pride and joy. Who knows, maybe it is a start of a cooking section that is to be developed? I definitely have a lot of time on my hands to cook and bake these days, so I shall keep you posted;)

Now, let's get on with the recipe!

PS: My instructions are simply guidelines- you can tweak and modify this dish to your personal liking! 


YOU WILL NEED:


- wholewheat pasta (as much as you like, I only made a portion for two)

- some sort of cream cheese (mine was already flavoured with pesto and rocket, but you can use plain and season it yourself)

-a few slices of smoked salmon

- one small courgette

- any type of cheese you like (one that melts will be best, as it has to create a 'blanket' on top of the pasta)


PREPARATION:

1) Slice your courgette quite thickly and either fry or grill it till it gets softer and more yellow. Season it with salt and pepper.

2) Boil your pasta very al dente, as it is going to soften a bit more in the oven.

3) Either slice or chop up the smoked salmon into smaller pieces.

4) Drain the pasta and mix it with the salmon pieces and cream cheese, until it is evenly coated in them.

5) Layer the pasta with slices of courgette in a baking dish (as you would with a lasagne).

6) Sprinkle with some cheese and bake in the oven for around 20 minutes in 180 degrees celsius.
